Honey Toasted Granola Recipe

*4 cups of your favourite nuts and seeds (almonds, pecans, walnuts, pepitas, chia etc).
* 2 cups shredded coconut
*3 tablespoons coconut or olive oil
*1 tablespoon Clayridge Honey
* 1 teaspoon vanilla essence
* Handful of sultanas, cranberries or apricots

Put nuts and seeds in a bowl. Mix together coconut oil, honey and vanilla essence (warm if you need to). Pour over nuts and mix. Spread mixture onto baking paper lined tray. Bake in oven at 160 degrees for approx. 20 minutes or until browned to your liking. You may like to stir whilst it is cooking. Once done, sprinkle with salt and mix through dried fruit. Enjoy !!
